Creamy Fruit Dip


8 oz. pkg. cream cheese (or 1/3 less fat cream cheese)
7 oz. marshmallow creme/fluff

Combine both ingredients in a bowl and mix together until smooth and creamy. Serve with fruit of your choice; bananas are the best in my opinion, but strawberries, cherries, apples, pears, and grapes are tasty as well!


Best Guacamole


2 avocados
½ lemon, juiced
2 Tbsp. chopped onion
½ tsp. salt
2 Tbsp. olive oil
fresh cilantro to taste

Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt, olive oil, and cilantro. Cover the bowl, and refrigerate for 1 hour before serving with your favorite tortilla chips.

Cilantro Corn Salsa


2 10 oz. packages frozen corn kernels, thawed
2 tomatoes, seeded and finely chopped
½ C finely chopped red onion
¼ C chopped cilantro
1 jalapeno pepper, seeded and finely chopped
1 T cider vinegar
2 t extra-virgin olive oil
½ t salt

Combine all ingredients in a bowl. Refrigerate for an hour or overnight and serve with tortilla chips.

Hot Beef Dip


8oz. cream cheese
1 C sour cream
2.5 oz. jar dried beef, chopped into small pieces
2 T chopped green pepper
2 T grated onion
2 T milk
3-4 dashes Tabasco

In a bowl, soften cream cheese and milk. Add sour cream and Tabasco. Stir in beef, green pepper, and onion. Place in an 8×8 casserole dish and bake at 350 degrees for 20 minutes. Serve warm with your favorite crackers.

Buffalo Chicken Dip


2-3 grilled chicken breasts, cooked and shredded
2 8oz. packages softened 1/3 less fat cream cheese
1 16oz. container light sour cream
Franks RedHot (3 oz. or more to taste)
3/4 C ranch dressing (or more to taste)
8oz. colby-jack cheese, shredded

Combine cream cheese, sour cream, hot sauce, and ranch dressing in a skillet. Stir over medium heat until all ingredients are melted and smooth. Add chicken and stir to combine. Add shredded cheese; stir until melted and well combined. Spread into a 9×13 pan or serving dish of your choice. Serve with tortilla chips, bread cubes or your favorite crackers.
